Who doesn’t love a Pioneer Woman recipe? Here’s one my family enjoys as they head out the door. #GrabAndGo

French Breakfast Puffs

3 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp. nutmeg
1 cup granulated sugar
2/3 cup shortening
2 eggs
1 cup milk

1 cup unsalted butter
1 1/2 cups sugar
1 Tbs. cinnamon

In a bowl, combine flour, baking powder, salt and nutmeg; set aside.

In a separate large mixing bowl, cream together the sugar and the shortening; add the eggs and mix again. Alternate adding one-third of the flour mixture and one-third of the milk to the creamed mixture, beating well after each addition.

Fill 12 greased muffin cups 2/3 full. Bake muffins, uncovered, in preheated 350 degree F oven for 20-25 minutes or until golden and tops spring back when gently touched. Remove muffins from pan and set aside.

To make the coating, melt butter in a small saucepan. Combine sugar and cinnamon in a bowl. Dip the warm muffins into the melted butter, then roll in the sugar mixture.
