White Maple Peppernut Granola

3 cups old-fashioned rolled oats
2 cups shredded sweetened coconut
2 cups chopped pecans
2 cups Prairie Heritage Traditional Peppernuts
1 Tbs. cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
2/3 cup Wright Sunflower Oil
1/2 cup pure maple syrup
2 cups white chocolate morsels 

Position rack in center of oven and preheat oven to 350 degrees F. 

In a large mixing bowl, combine oats, coconut, pecans, peppernuts, and spices; pour oil over mixture and toss to combine. Repeat with maple syrup and toss all ingredients until evenly coated.

Transfer granola to a large greased baking sheet pan and spread out evenly. Bake, stirring every 10 minutes, until mixture turns golden brown, 25-30 minutes. 

Remove granola from the oven and toss frequently as it cools, scraping the bottom of the pan to prevent sticking. Once granola is completely cool, toss in white chocolate morsels and store in an airtight container.
