Caramel Cinnamon Churro Chex Mix
4 1/2 cups Rice Chex cereal
4 1/2 cups Corn Chex cereal
3/4 cup packed dark brown sugar
1/2 cup unsalted butter
1/3 cup light corn syrup
1/4 tsp. baking soda
2/3 cup granulated sugar
2 tsp. ground cinnamon
3 cups Cashmere Cinnamon Popcorn
2 cups Cheezits crackers
Preheat oven to 350 degrees F. Line a large baking sheet with foil and spray with nonstick baking spray.
Place cereals in a large, heat safe mixing bowl. In a small bowl, combine cinnamon and sugar and set aside.
In a saucepan over medium heat, bring brown sugar, butter, and corn syrup to a boil; simmer for one minute, stirring constantly, then remove from heat and stir in baking soda.
Pour prepared brown sugar mixture over cereal in mixing bowl and toss until well coated; spread cereal out over prepared baking sheet, then sprinkle evenly with cinnamon/sugar mixture.
Bake 5 minutes, then flip with a spatula and bake an additional 5 minutes; remove from oven and let cool completely. When cool, gently break cereal apart into pieces then toss with popcorn and Cheezits; store in an airtight container.
