Chewy Caramel Kettle Corn and Pretzel Treats {Kansas State Fair}

Each year I enjoy fair weekends with From the Land of Kansas where I get to trick out some delicious Kansas products in creative (and sometimes crunchy) recipes! Thrill’s Kettle Corn is always a favorite and makes the best snack for your stroll around the fairgrounds!

Chewy Caramel Kettle Corn and Pretzel Treats

4 cups coarsely chopped salted pretzels
2 cups granulated sugar
1/2 cup water
kosher salt
2/3 cup heavy cream
2 cups mini marshmallows

Coat a 9 x 13 baking dish with nonstick spray. In a large mixing bowl, toss together kettle corn and pretzels. In a large sauce pan over medium high heat, bring sugar, water, and 1/2 tsp. kosher salt to a boil; do not stir! Simmer until mixture is an amber color, 8-12 minutes. Remove saucepan from heat and slowly pour in cream (mixture may bubble way up, so be prepared – this is why you need to use a large saucepan!) then add marshmallows, stirring until melted.

Pour prepared caramel mixture over kettle corn and pretzels and quickly combine using a large silicone spatula. Transfer mixture to prepared baking dish, using a piece of plastic wrap coated with cooking spray to press evenly into the dish. Sprinkle with a bit of kosher salt and let mixture cool. Cut into bars when cool. (Store bars in an airtight container for up to 3 days.)
