In Spanish, Fideo means noodle and is a type of pasta commonly used in soups in many different cuisines.
Pressure Cooker Chicken and Black Bean Fideo Soup
1 yellow onion, diced
1 tsp. each cumin and chili powder
1/2 tsp. each granulated garlic and smoked paprika
2 Tbs. tomato paste
1 cup fideo pasta
2 cups shredded cooked chicken
14 oz. can black beans, drained and rinsed (or 1 1/2 cups cooked black beans)
4-6 cups chicken broth (depending on how thick you prefer your soup to be)
10 oz. can diced tomatoes and green chilies
Salt and pepper, to taste
Toppings: sour cream, avocado, cilantro, salsa, black olives, shredded cheeses
Set Pressure Cooker* (PC) pot to sauté setting and add a bit of oil; when oil is hot, add onions, spices, and tomato paste, stirring and cooking until tomato paste is a deep, dark red or even more brown-ish in color.
Add 2 cups chicken broth and stir to combine, bringing mixture to a boil.
Lock PC lid into place and choose high setting for 2 minutes; when timer sounds, use a quick release to let all pressure escape from PC. Remove PC lid and stir ingredients in pot; stir in chicken, beans, diced tomatoes and green chilies, and broth. Season to taste with salt and pepper.
To serve soup, top with your favorite toppings and enjoy.
