Open-Face Bacon and Egg Breakfast Quesadillas

These are fun to make and can be done on a cookie sheet if you need to make several. Brown sprayed tortillas in the oven on a heavy cookie sheet, then turn proceed as directed below. 

Open-Face Bacon and Egg Breakfast Quesadillas

Flour tortillas
Nonstick spray
Sliced avocado
Eggs
Chopped, cooked, bacon
Shredded cheese

Preheat oven to high broil. On a hot, greased, cast iron griddle, cook a flour tortilla until golden brown; flip tortilla and place avocado slices around the outer edge; sprinkle with a bit of cheese, leaving the center of the tortilla open. Crack egg into the center opening, on top of tortilla. Place griddle into oven, 6″ beneath the broiler. Broil for about 3 minutes for an over easy egg, or to your liking. Remove from oven and top with additional cheese and bacon. Season to taste with salt and pepper; serve at once.
