Chicken Quesadillas with Chipotle Sauce
Cooked, shredded chicken
Tomato Sauce (I like Hunt’s Roasted Garlic)
Cumin and chili powder, to taste
Jodi’s Chipotle Sauce
2 parts mayo
1 part sour cream
Chipotle Sauce, to taste
Combine until smooth and blended.
Combine shredded chicken with desired amount of tomato sauce in a saucepan over medium heat; cook until simmering.
Place flour tortillas onto a preheated griddle with a bit of butter; add warm chicken filling on one half, top with cheese and fold tortilla over the top. Grill on both sides until golden brown and cheese is melted. Top with chipotle sauce and serve.
