Cuban Pork Steak Sliders with Jodi’s Chipotle Sauce


I love a good recipe that calls for pork steak! Pork steak is flavorful, juicy, cooks quickly, and is nearly always available as a good value from the meat case

Cuban Pork Steak Sliders with Jodi’s Chipotle Sauce

3 lbs. pork steak, cut into serving pieces
Oil, for browning
2/3 cup orange juice concentrate
2/3 cup lime juice (approx 5 limes)
Slider buns (also delicious using warmed or grilled corn tortillas instead of buns)

Spice Rub
1 Tbs. each: granulated garlic, kosher salt, oregano, black pepper, ground cumin
1 tsp. red pepper flakes

Heat oil in Electric Pressure Cooker(PC) set on browning or sauté setting; when oil is hot, add steak pieces, working in batches, taking care not to crowd pot, browning pieces on both sides, removing to a plate as you go. Once all pork is browned, add lime juice to deglaze the PC pot, stirring up browned bits from the bottom of the pot. Stir in oj concentrate; return browned pork to the pot. Lock lid into place and choose high pressure setting for 8 minutes. When timer sounds, do nothing! Use a natural release to let all pressure escape from PC, taking approx 15 minutes. Remove lid; place pork onto a platter.

1 cup very thinly sliced red cabbage
1/2 cup chopped cilantro
juice of 2 limes
1/2 tsp. lime zest
Salt and pepper, to taste

To make slaw, place ingredients in a bowl and gently toss to combine.

Jodi’s Chipotle Sauce
2 parts mayonnaise
1 part Ranch dressing
chipotles in adobo, to taste

To make sauce, place all ingredients into a food processor and process until smooth; adjust according to taste.

To serve, slather buns with prepared chipotle sauce, top with warm pork and a spoonful of slaw. Enjoy at once.
