Grilled Pork Kabobs with Honey and BBQ Sauce
2 tsp. each: granulated garlic, paprika, granulated onion
½ tsp. red pepper flakes
½ cup ketchup
¼ cup soy sauce
1 Tbs. fresh ginger root
2 Tbs. sesame oil
3 Tbs. honey whiskey
3 Tbs. dark brown sugar
1 ½ – 2 lbs. country-style pork ribs, cut into 1 1/2 “ cubes
Combine spices, red pepper flakes, ketchup, soy sauce, ginger root, sesame oil, whiskey, and brown sugar in a large bowl; add cubed pork and let marinate for 4-6 hours.
Meanwhile, heat an oiled grill over medium high heat. Remove pork cubes from marinade, reserving marinade; thread marinated pork cubes onto soaked wooden skewers, leaving approx. ¼” inch space between each cube. Grill, uncovered, for 10-12 minutes, turning every 2-3 minutes to brown evenly, until cooked throughout.
Meanwhile, in a saucepan, bring reserved marinade to a boil over medium high heat; boil for 2-3 minutes, then remove from heat. Serve kabobs with warm sauce.
