I make this pie as soon as fresh strawberries are available, when the weather turns nice and warm. The boys go crazy for it and I like how quick and easy it is to prepare.
Refrigerator Strawberry Pie
1- deep dish baked pie crust, 9″
1 pkg. Jello Strawberry Creme Instant Pudding, 3.4 oz.
1/2 cup water
4 oz. cream cheese, softened
1 can sweetened condensed milk, 14 oz.
3 cups whipping topping, divided use
1 cup sliced strawberries
Halved strawberries, for top of pie
In a large mixing bowl, whisk together pudding and water till smooth; add cream cheese and whisk again. Once cream cheese is incorporated, stir in sweetened condensed milk. Gently fold in 2 cups whipped topping until combined. Place sliced strawberries evenly over crust; top with prepared strawberry filling. Spread remaining cup of whipped topping over filling, then decorate with strawberry halves, as desired. Chill for 4-5 hours before slicing to serve.
