Wheat Berry Waldorf Salad

1 cup wheat berries
3 cups chicken or vegetable broth
1 tsp. kosher salt
1 Granny Smith apple, skin-on, seeds removed, diced
3 celery stalks, diced
1 cup red grapes, halved
1/2 cup toasted, chopped walnuts
1/2 cup bleu cheese crumbles

Dressing
1/3 cup good olive oil
3 Tbs. apple cider vinegar
1 Tbs. spicy brown mustard
1/2 tsp. kosher salt
2 Tbs. honey or agave nectar

Into pressure cooker pot, add wheat berries and broth, stirring to combine; place lid onto pc and lock into place. Choose high setting and set timer for 30 minutes; when timer goes off, use a natural pressure release for 15 minutes, followed by a quick pressure release, if needed. Remove wheat berries from pc pot to cool. Meanwhile, create dressing by whisking all ingredients together. To assemble salad, combine cooled wheat berries with apples, celery, grapes, and walnuts; toss with desired amount of prepared dressing, then top with blue cheese crumbles.
