You’re going to want to try this recipe – interesting technique and we loved the flavor the vinegar added. 

Crispy Taters

10 small red potatoes, cut into 1″ chunks
2-3 Tbs. olive oil
1/4 cup white wine vinegar

Place potatoes into a cast iron baker; drizzle with 2-3 Tbs. olive oil, add white wine vinegar, then cover with water and let potatoes cook, uncovered, for about 2 hours at 350 degrees F, tossing occasionally, until all liquid is absorbed and potatoes are fork tender. Place potatoes beneath broiler for a bit until super crisped on top. Season with salt and pepper and dig in……so, so, delicious!!

Recipe can easily be doubled or tripled for bigger batches.
