BBQ Chicken Sandwiches with Cucumber Salad

Put this oh, so simple sandwich recipe on your next meal plan. For the chicken? Just grab a rotisserie chicken from the store and slather it with this homemade BBQ sauce! 

Slaw

1/2 red onion, very thinly sliced
1 small cucumber, very thinly sliced
1 Tbs. red wine vinegar
1/4 tsp kosher salt
1 Tbs. olive oil
1 tsp. granulated sugar
1/2 tsp. dried dill

In a bowl, combine vinegar, salt, oil, sugar and dill; whisk to combine. Add onions and cucumber and toss; set aside.

 

BBQ Chicken

3 cups cooked shredded chicken (use a rotisserie chicken!)
1/2 cup ketchup
2 Tbs. dark brown sugar
2 Tbs. red wine vinegar
1 tsp Worcestershire sauce
2 tsp. Spicy brown mustard
1/4 tsp smoked paprika
4 lettuce leaves
4 brioche buns (or any kind you like), split open and toasted

In a large skillet, combine ketchup – paprika and whisk to combine; add 3 Tbs water and bring to a simmer. Add chicken to sauce and heat throughout.

Serve sandwiches open-face, placing lettuce on top of toasted buns, then add chicken; top with cucumber salad.
