Bacon, Lettuce, Tomato… with Cheese and Egg Grilled Sandwiches

BLT(CE) Grilled Sandwiches- Bacon, Lettuce, Tomato… with Cheese and Egg!

BLT(CE)

your favorite bread (I prefer sour dough for this sandwich)
butter, softened
cooked, crispy bacon
lettuce leaves
tomato slices (preferably from homegrown summer tomatoes!)
medium or sharp cheddar slices
mayo (preferably Hellman’s)
fried eggs, we like over-easy, seasoned to taste with salt and pepper

Butter sliced bread and assemble sandwich, as desired.  (At our house, the boys always want to leave out the L and the T, of course.) Place buttered-side-down onto a nicely preheated griddle or skillet and cook until each side is crisped and golden, and insides of sandwich are oozing out.  Enjoy!!
