Grown-up Grilled Cheese

If you’re anything like me, a good grilled cheese sandwich is a staple in your home. Quick lunch? Grilled Cheese. Forget to plan for dinner (or just want a night off)? Grilled Cheese! Empty pantry? Grilled Cheese. Picky kiddos? Yup… grilled cheese. But if you’re tired of the same ol’ plain grilled cheese, tire no more! I’m excited to share with you two of my favorite (and simplest) grilled cheese recipes that will add some pizzazz to this culinary classic.

The first is a very sophisticated grown-up whopper using Muenster cheese and apricot preserves on raisin bread! It sounds different, but tastes amazing, and you may never want a plain grilled cheese again. The second is one for my boys that I call the BLT(CE). It’s a grilled cheese and egg sandwich topped with bacon, lettuce and tomato! The bacon and egg give the classic grilled cheese a little protein, and the lettuce and tomato? Well… if I can get my boys to put it on we’re just thankful for the veggies.

Zest and Zing

Now, if you are looking for some more culinary pizzaz this spring, I have just the event for you! On April 21st, I am teaming up in Lawrence with Kansas Farm Bureau for our annual Zest and Zing. It is a fun event that brings local foodies and farmers together for one night to enjoy hors d’oeuvres and a little friendly culinary competition between two local high schools. The last activity for the evening will be a panel discussion featuring Kansas farmers and ranchers. And if that’s not great enough, half of all ticket sales will be donated to Just Food, a Lawrence-area food bank. To learn more and buy tickets you can visit the KFB website Here. But hurry! Apricot Grilled Cheese on Raisin Bread

Muenster on Raisin Breadcinnamon raisin bread
butter, softened
sliced muenster cheese
apricot preserves

Spread apricot preserves onto each slice of raisin bread, as desired.  Top with cheese and place sandwich (buttered) onto a preheated griddle or skillet, cooking until nicely crisped on the outside and oozing at the center. I promise, it’s one of the best dang grilled cheese you’ll ever put in your mouth!

BLT(CE) Grilled Sandwiches- Bacon, Lettuce, Tomato… with Cheese and Egg!

BLT(CE)

your favorite bread (I prefer sour dough for this sandwich)
butter, softened
cooked, crispy bacon
lettuce leaves
tomato slices (preferably from homegrown summer tomatoes!)
medium or sharp cheddar slices
mayo (preferably Hellman’s)
fried eggs, we like over-easy, seasoned to taste with salt and pepper

Butter sliced bread and assemble sandwich, as desired.  (At our house, the boys always want to leave out the L and the T, of course.) Place buttered-side-down onto a nicely preheated griddle or skillet and cook until each side is crisped and golden, and insides of sandwich are oozing out.  Enjoy!!
