Nothing can warm you up on a cold winter morning more than a hot, delicious breakfast bowl. To highlight Grandma Hoerner’s Big Slice Apples (which are amazingly delicious and almost too easy to use), I whipped up a big healthy bowl of cinnamon quinoa. Then I topped it with one of my favorite flavors of Big Slice Apples and sprinkled on some heart-healthy toasted pecans. Can’t beat that!
Warm and Nutty Breakfast Quinoa Bowls with Big Slice Apples
1 cup milk
1 cup water
1 cup quinoa
pinch of kosher salt
½ tsp. cinnamon
1 tsp. vanilla extract
19 oz. jar Grandma Hoerner’s Big Slice Kettle Cooked Blueberry Pomegranate Apples
yogurt, for topping
1/3 cup chopped toasted pecans, for garnish
Stove Top Method
In a small saucepan over high heat, combine milk, water, quinoa, salt and cinnamon; bring to a boil. Cover; reduce heat to medium low and simmer for 12-15 minutes or until most of the liquid is absorbed by the quinoa and quinoa is tender; stir in vanilla extract.
Pressure Cooker Method
Place quinoa, salt, cinnamon, and 2 cups water (water is replacing the milk used in the stove top method) into pressure cooker pot; lock lid into place and choose high setting; set timer for 3 minutes. When timer goes off, use natural release of pressure for 10 minutes, then use a quick pressure release to release any remaining pressure. Remove lid carefully and fluff quinoa with a fork.
Divide warm quinoa between 4 bowls and top with desired amount of Grandma Hoerner’s Big Slice Apples; garnish with yogurt and pecans and serve at once.
