This recipe can go into the Fast and Fabulous category – aren’t you always thankful for those guys that you can fall back on to create something just a little bit special but in a speedy way? I am! I’ve learned it definitely helps to keep a few jars of Grandma Hoerner’s products hidden away in my pantry so they are handy when I’m scrambling to get dinner done.
1-2 Tbs good olive oil
1 lb. orzo pasta
1 lb. portobello mushrooms, sliced
1- 2 cups beef broth
16 oz. jar Grandma Hoerner’s Mediterranean Truffle Sauce
1 lb. grilled Oatie Beef sirloin, medium rare, thinly sliced across the grain and cut into bite-size pieces, warm
Kosher salt and freshly ground black pepper, to taste
Freshly shredded Parmesan, for garnishing
In a large skillet over medium high heat, heat oil. When oil is nicely hot, add orzo and cook, stirring often, for 3-4 minutes.
Add mushrooms and sauté with orzo, cooking an additional 1-2 minutes. Add 1 cup broth along with jar of truffle sauce to pan, stirring to combine.
Add remaining 1 cup broth to skillet, stirring and cooking until orzo is al dente; season to taste with salt and pepper.
Stir in beef and top orzo with Parmesan to serve.
