Queso Blanco

espinacaI was first introduced to Espinaca  via Jose Pepper’s Mexican Restaurant (their version of Queso Blanco) when they were a featured From the Land of Kansas guest on Chef Alli’s Farm Fresh Kitchen.  It’s a luscious white cheese and spinach dip that takes con queso to a whole new level – feel free to spice it up any way you’d like! This recipe fits perfectly in a 10 inch cast iron skillet, even if you stir some leftover shredded, cooked beef – fyi.
