Easy Asian Pork and Noodle Bowls

Here’s a super fast meal in a bowl that your family will enjoy. I use this recipe often for leftover roast beef, pulled pork, rotisserie chicken, or grilled salmon – any type of cooked meat will work just fine, so stir in what you like.  You can also stretch this dish a bit by adding more noodles and sometimes I even toss in some cooked veggies, as well.  Be brave and add whatever sounds good!

2 cups cooked shredded pulled pork
2 ounces spaghetti or angel hair pasta, cooked and drained
1/4 cup soy sauce
2 Tbs. granulated sugar
4 cloves garlic, minced
2 Tbs. rice vinegar
3 Tbs. pure sesame oil
1/2 tsp. red pepper flakes
4 Tbs. canola or vegetable oil
4 scallions, chopped

Whisk all ingredients, but noodles and green onions, together in a bowl. Taste and adjust ingredients as needed, then pour sauce over warm noodles, tossing to coat. Top with green onions and serve at once.
