Salted Brown Butter Rice Krispies Treats

Here’s a recipe from Deb Perelman’s Smitten Kitchen blog that you definitely need! This takes Rice Krispies treats to an entirely new level (deliciously fabulous for those adult-only gatherings) , and provides another go-to recipe for those times when you need to make something in a flash.  And, as Deb says, get ready to make lots of new friends with this recipe.  

1/2 cup unsalted butter
1/4 heaping tsp. kosher salt
10 oz. pkg. marshmallows
6 cups Rice Krispies cereal

In a large pot, melt butter of medium-low heat until it turns golden, begins to foam, and then finally turns brown and smells nutty; stir frequently, scraping up any browned bits from the bottom of the pot as you go.  Take care not to burn butter – it scorches quickly!  Meanwhile, spray an 8-inch pan with non-stick spray.

When butter is nicely browned, add marshmallows and stir until marshmallows  are nearly all melted; remove from heat. Stir in salt and cereal together.  When well combined, quickly spread in prepared pan, using a buttered spatula or a piece of wax paper to press firmly into pan.  Let cool and cut into squares to serve.
