Watermelon, Barley Berry, Edamame, and Feta Salad

This screams SUMMER, and you’re going to love the combination of textures and flavors in this tasty salad – Scout’s Honor. Feel free to sub wheat berries in place of the barley berries, if you’d like.  

6-8 cups diced watermelon
2 cups cooked barley berries, I get mine from Paramount Food Grains, Quinter, KS, a From the Land of Kansas, member business
2 cups fresh edamame
1 Tbs. chopped fresh mint
1/4 cup feta crumbles
2-3 Tbs. minced red onion

Dressing
2 Tbs. good olive oil (I used an orange-flavored olive oil from The Tasteful Olive, Overland Park, KS)
2 tsp. good, sweet balsamic vinegar
kosher salt and freshly ground black pepper, to taste

Gently toss salad ingredients together in a mixing bowl; divide between two plates.  Whisk oil and vinegar together to create dressing; drizzle over salad on plates, then season salads with salt and pepper.
