Corn Salad

One of my favorite Summer recipes

I could eat my weight in this salad and I never get tired of it, either!  It’s a summer staple at our house during hot weather and I like knowing it’s always available in the fridge when we want something cool, tasty and quick.

4 cans shoe peg corn, drained
1 cucumber, seeded and chopped
3 roma tomatoes, seeded and chopped
6 scallions, white and green parts both, chopped

2/3 cup mayonnaise
2 Tbs. cider vinegar
1 Tbs. sugar
Salt and pepper, to taste

Combine dressing ingredients and pour over salad ingredients in a large bowl; toss gently to combine. Let chill for 8-10 hours before serving to let flavors combine well.
