Made with Oatie Beef and Salvy Sousa Kickin’ Ketchup, this burger is a masterpiece. Get your napkins ready – it’s juicy, messy and totally worth it! The nugget inside each burger is a nice little stash of melted cheddar.
1 1/2 lbs. ground beef sirloin or chuck (I love to use Oatie Beef)
1 tsp. kosher salt and 1/2 tsp. freshly ground black pepper
4 slices sharp cheddar cheese, quartered
pickled red onions (or substitute sliced red onions)
4 Kaiser buns, split and toasted
1 tomato, thinly sliced
Spicy Mayo Sauce
1/2 cup Salvy Sousa Kickin’ ketchup (or substitute any ketchup you prefer)
1/4 cup mayonnaise
1 large ripe avocado, mashed
2 Tbs. chopped fresh cilantro
1 Tbs. fresh lime juice
1 tsp. chipotle sauce
1 clove garlic, minced
salt and pepper, to taste
Combine mayonnaise and ketchup to make spicy mayo. To create guacamole, combine all ingredients in a small bowl; season to taste with salt and pepper. To make burgers, gently mix ground beef with salt and pepper; shape beef mixture into 8 equal patties, each about 4 inches wide. Top each of 4 patties with 4 quarters of cheese; place the remaining 4 patties on top and press the edges of the beef together, sealing well all the way around each patty.
Prepare the grill or grill pan over medium high heat. Oil grill or grill pan; when hot, place prepared patties onto cooking surface. Brown patties well on each side, then reduce heat to medium and continue to grill burgers about 7 minutes total for medium rare, or desired degree of doneness.
Dress bottom buns with spicy mayo; top with guacamole, burgers, pickled onions, lettuce and sliced tomato. Place bun tops in place and serve at once.
Makes 4 fat, juicy burgers.
