Not a fan of traditional cooked oatmeal, I was thrilled to learn that I like chilled overnight oatmeal – it’s completely a TEXTURE thing! Eaten in this fashion, it’s a refreshing breakfast or snack and I often make it without letting it rest overnight, but rather an hour or so in fridge. Delicious!
1/4 cup rolled oats
2 Tbs. ground flax seed
2 Tbs. Plain or flavored Greek yogurt (I make chocolate yogurt to use with the Chunky Monkey flavor option below)
2/3 cup milk, I use 2%
Agave nectar, honey or your favorite sweetener, to taste
1/2 banana, sliced
1 Tbs. sliced almonds
1/2 cup assorted berries
1 Tbs. sliced berries
1/2 cup blueberries
1 Tbs. chopped walnuts
1/4 tsp. cinnamon
In a tall (20 oz) glass, add the oats, flax seed, yogurt, and milk; stir to combine.
Add the flavor option ingredients of your choice and stir once again.
Adjust sweetness, if needed, and place in the fridge overnight. Will keep for up to 2 days in the fridge.
