A favorite summertime dessert at our house. I like recipes that call for ingredients that I typically have on hand and this is one of them! This is also a great dessert to take to pot luck gatherings – who doesn’t love a STRAWBERRY dessert?
1 angel food cake mix, prepared according to directions, cut into 1″ cubes
2 – 8 oz. pkgs low fat cream cheese, softened
2 cups powdered sugar
8 oz. light whipped topping
2 pkgs strawberry jello, 3 oz. each, sugar-free works great
1 1/2 cups boiling water
3 cups ice cubes
Place angel food cubes into a 9 x 13 pan. Combine cream cheese with powdered sugar until smooth; fold in whipped topping. Spread cream cheese mixture over angel food cubes. Combine jello with boiling water and stir until jello is dissolved; add ice cubes and stir until melted; fold in strawberries. Pour jello mixture over cream cheese layer. Refrigerate over night or until well chilled, approx 6-8 hours.
