My down-the-hill neighbor is Alma June. When I need to borrow a cup of sugar or a stick of butter, I ring her up and say “Alma June, this is your Needy Neighbor again…..”. She knows I’ll be trudging down to retrieve something I’m out of, most likely staying for a glass of wine and a bit of conversation so we can catch up. Often, Alma June invites us over for supper and she serves these Chicken Bundles – our whole family loves them!
8 oz. cream cheese, softened
4 Tbs. milk
4 cups shredded cooked chicken breast (I often use the meat from a rotisserie chicken – this is approx. 3-4 cups, depending on the bird)
2 Tbs. chopped onions (sometimes when I’m in a hurry, I sub 1/2 tsp. granulated onion)
kosher salt and freshly ground black pepper, to taste
2 cans crescent roll dough
1 cup seasoned croutons, crushed (or substitute 1/3 cup panko bread crumbs)
4 Tbs. butter, melted
In a mixing bowl, combine cream cheese with milk until smooth; add chicken and onion and combine well; season to taste with salt and pepper. Unwrap both cans of crescent roll dough and divide dough into 8 squares, placing each on onto a greased baking sheet. Top each square with 1/8 of the prepared chicken mixture. In a small mixing bowl, combine crushed croutons or panko with melted butter; divide evenly, sprinkling over the top of chicken mixture. Pull opposite corners of dough together, pinching closed to create bundles. Bake, uncovered, in preheated 375 degree oven for 20-25 minutes, or until golden brown. Serve at once.
