Chocolate-Dipped Cheesecake-Stuffed Strawberries

Nothing says I LOVE YOU like chocolate, strawberries, and cheesecake!  These little bundles are very quick, easy, and impressive.  Warning:  When delivering these to special people, be ready to duck.  I’ve seen recipients get so excited over these treats, they try to do back flips…’s quite entertaining and fun to know you’ve made their day. 

24 large strawberries, washed and thoroughly dried
8 oz. cream cheese, room temperature (let cream cheese soften on the counter – I softened it in the microwave once, and it was a total disaster!)
½ cup confectioner’s sugar
1 tsp. pure vanilla extract
5 oz. premium bittersweet (semi sweet) chocolate (I LOVE to use Cocoa Dolce callets, a wonderful From the Land of Kansas member business, available in Belgian bittersweet chocolate, milk chocolate, and white chocolate)
3 oz. premium milk chocolate
2 Tbs. graham cracker crumbs

Slice off the stem of each strawberry; use a paring knife to scoop out a little bit of each berry to make a cavity in the center; using the corner of a paper towel, gently pat each strawberry cavity as dry as you can. Set berries aside.

In a mixing bowl, combine cream cheese, confectioner’s sugar, and vanilla using an electric mixer; beat until smooth. Place this mixture into a pastry bag fitted with a medium tip.  Set aside.

Place chocolate In a small glass bowl; microwave on full power for 30 seconds; gently stir, using a small silicone spatula. Microwave in 5 second increments, stirring each time, until chocolate is completely melted.  The cooking time will vary based on the type and amount of chocolate you are using, as well as the kind of microwave.  **Click here for more tips on microwave chocolate tempering.

Gently dip the bottom of each strawberry in the melted chocolate. Set on baking sheet that has been lined with waxed or parchment paper. After chocolate has set up a bit, pipe cream cheese mixture in pastry bag into the cavity of each strawberry, mounding a bit at the top of each strawberry.  (If pastry bag is not available, you can use a small spoon to fill strawberries, but it doesn’t look nearly as pretty.)

Sprinkle a smidgen of  graham cracker crumbs onto cream cheese filling in each strawberry, for garnish, if desired. Place prepared strawberries into fridge.

Strawberries are best served at room temperature within 6-8 hours of preparation.
